This month’s program featured The Pachamama Alliance, who's mission is to empower the indigenous women and communities of the Ecuadorian rainforest to ensure safe birthing and the health and well being of the Achuar people. The Jungle Mama's goal is to empower Achuar Women to ensure the success on all joint projects and to build the capacity to become self-sustaining.
Lisa Wade hosted the program at the ReMax office in Boulder.
Melanie Muckle presented the program.
I wanted to add a couple of recipes that were submitted to the DFW upcoming cookbook by two of our members.
Sukuma Wiki – A Kenyon
Recipe
Sukuma Wiki is a
vegetable recipe that means to “push the week.” It is a dish families use when
food is scarce and they need “to make it last a week.”
Ingredients:
1 onion, chopped
3 tomatoes, chopped
1 bunch of collard greens
or kale, chopped into very small pieces
1 bunch of cilantro,
chopped into small pieces
1 Tablespoon salt
Preparation:
Sauté onion in olive oil
until translucent
Add tomatoes and simmer
for a few minutes
Add greens, stirring
until cooked down
Stir in cilantro until
cooked down
Add salt and stir well

Flourless Chocolate Cake

4 -1oz squares semisweet chocolate
1/2 C butter
3/4 C white sugar
1/2 C cocoa powder
3 eggs, beaten
1 t vanilla extract
Preheat oven to 300 degree. Grease an 8-inch round cake pan, and dust with cocoa powder.
In the top of a double boiler over lightly simmering water, melt chocolate and butter. (Or heat in pan w/out double boiler, but watch carefully so butter and chocolate don't burn). Remove from heat and stir in sugar, cocoa powder, eggs and vanilla. Pour into prepared pan.
Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with powdered sugar if desired.
I tried to get a photo of the fabulous cake.....but I was too late.....only crumbs left :-)
